Mechanism
Prozyme LTAA3L can be hydrolyzed starch molecules @-1.4 glucoside bond, arbitrarily short-cut to different short-chain dextrin and a small amount of low-molecular weight carbohydrates, amylose and amylopectin are no rules in the form of decomposition, so that starch paste viscosity decreased rapidly, namely, "liquid" effect, it is also known as liquefied natural enzymes
