Propylene Glycol Alginate (PGA) is an ester of alginic acid in which originally derived from brown algae as some of the carboxyl groups are esterified with propylene glycol, some neutralized with an appropriate alkali and some remain free. It is in the form of white or flaxen powder and can be easy dissolved in water. It forms smooth and viscous after dissolved in water that is very stable in the pH ranges betweens 3 – 5 and it is resistant to reaction with polyvalent cations such as Ca2+ because the carboxyl groups have been blocked by esterification with propylene glycol groups. Therefore, Propylene Glycol Alginate is widely used in acid foods and acid mild drinks as thickening agent, emulsifier and stabilizer.
