Beta cyclodextrin is a kind of white crystalline powder which is the product of glucosyltransferase and starch. Its ring structure is constructed by 7 dextroses via the function of α-1.4 bonds. There is a hole in its molecule. The outer side of hole keeps strong hydrophilic characteristics; the inner side of hole keeps hydrophobic characteristics. It can entrap many kinds of guest molecules into their internal, particularly to entrap oil form substance and form inclusion complexes. It is widely used in foods, cosmetic and pharmaceutical industries as stabilizer, emulsifier, flavoring agent and aseptic.
