CITREM can be widely used as the emulsifier,stabilizer,and antispattering agent and as the synergistic component with anti-oxidants within food industy. 

 

Functional uses: 1.It is used as emulsifier, penetrant, stabilizer, quick-dissolving agent, antistaling agent, wetting agent, dispersing agent in ice cream, rice and flour, baked products, sweets, dairy products, and meat.

2.It can be used as the synergistic comonent within formulathions for anti-oxidant blends.3.In margaring products, sauces and low-calorie foodstuffs.

4.In foundants, it can be used to improve gloss and smoothness.

5.It can be used as the solubilisier in flavor and as the effective lecithin in chocolates.

6.In meat products, the addition of CITREM can reduce fat sepration.
