A high-molecular-weight polymer of D-glucose, produced by enzymes (glycosyltransferases) on the cell surface of certain lactic acid bacteria.Use of dextrans as long and hydrophilic spacer arms improves the performance of immobilized proteins acting on macromolecules, used as a partial subbtitute for blood plasma mainly as volume expanders.
