Humans, and all animals, have complex antioxidant defense systems, but they are not perfect and oxidative damage will occur. Many diseases are thought to be particularly the results of oxidative stress, which can lead to damage of the larger biomolecules, such as DNA, lipids and proteins. Apples had the highest portion of free phenolics when compared to other fruits[5], this means that these compounds are not bound to other compounds in the fruits, and the phenolics may be more available for eventual absorption into the bloodstream. Major apple polyphenols include: epicatechin, caffeic acid, phloridzin, phloretin, avicularin, reynoutrin, hyperin, isoquercitrin and quercitrin. Among these bioactive compounds, phloridzin and phloretin, respectively, havs also been proven to be of great positive effects in preventing cancer, maintaining bone health, and treating diabetes and other age-related diseases.
